You can create your own keyboard shortcut for Superscript and Subscripts and almost any other Menu item you want. You can do this for 'Any Application' or for a specific Application like Notes.

I have managed to remap the Mac keyboard shortcut to be something different for opening app preferences, but now command + comma just doesn't do anything at all. On an older version of Firefox, it would open the preferences AND do the subscript, so I'd just have to close out the preferences tab, but now it doesn't respond at all when type. Undo superscript or subscript formatting. To undo superscript or subscript formatting, select your text and press Ctrl+Spacebar. Insert a superscript symbol. For certain symbols that are almost always superscript, such as ® and ™, simply insert the symbol and it will automatically be formatted as superscript. On the Insert tab, click Symbol.

Go to System Preferences>Keyboard>App Shortcuts(left column)>Shortcuts (Tab)

Click on the '+' icon near bottom; then in top pop up choose All Applications or scroll down to 'Notes' If you select a single app that is all the shortcut will be applied to.

You must use the exact lettering as appears in Menu. In notes Super/Subscript is found in Format>Font>Baseline>XX

In Menu Title field type 'Superscript' (no quotation marks) click on the Keyboard shortcut field and type in what you want to use as a shortcut.

Pages uses control+cmmd+= for this. (Caution: you want to use unique shortcuts not already used; or use the same shortcut as other apps.)

Click Add

Now do the same for 'Subscript'

Add your shortcut (Pages uses control+cmmd+- (minus) ) You can use any combo not used by other apps or if you only want it for Notes.

Click Add.

Now you have instant keyboard shortcuts.

By the way there is an excellent free app called 'CheatSheet' that will show you all keyboard shortcuts for whatever window you are in by holding down the cmmd key for a few seconds. This will include any you create. Link… https://www.mediaatelier.com/CheatSheet/

You can also use shortcuts 'Text' tab to create text expansions.
